I love burnt ends. But rarely have the time to babysit a brisket for 12-14 hours plus factoring in the cost. I found the following easy recipe and figured you broke asses would like to try it yourselves :flipoff2:
Start with a fatty cut of chuck roast. I selected a 2.75 pounder from my local butcher for $22. You'll also need a jar of your favorite BBQ sauce at $5 (jalopeno cherry) and a box of beef broth for $3.
Get your grill, smoker, whatever going and set at 275 degrees. Cut the roast into 1-1.5" cubes and place directly on the grates for about 2 hours. If the heat increases much, they'll over cool quickly, so be careful!
After a couple of hours, remove them, place in a tin pan with a 50/50 mix of the BBQ sauce and broth mix. I used 12 ounces each so I would have a little sauce left over. Cover the pan with foil and place back over heat for another 2 hours at 275*.
Remove, let it cool a few minutes so the liquid gels a little and you're done. That's it.
Pro tip: wrap a sweet tater in foil and place on the smoker the last 2 hours with the ends. It'll cook super soft, much like sweet potato casserole but w/o any dairy.
You end up with a ton of burnt ends, sub $30.
