Guess what that pattern will do as it breaks in over time? 
It'll settle right smack dab in the middle as the backlash opens up a hair when the bearings fully break in and the gear set does the same.
IMO a well centered pattern crown to root is more important than heel to toe. This is assuming backlash is in spec and you have an acceptable pattern crown to root.
