@tlucier as much as I would want to make some, it would be a long time coming.

The sharpening idea is I'm sorta half invested to do it. Knife making would require a lot more tooling unless I bought blanks. I really thought the scratch made market was pretty saturated.

I think you are correct. I've seen a few people spend 5-10k on more tools to net 2k in a year. But then you'd have more tools
 
Maybe someone already said it, but do you know her "cutting style"? Meaning, is she heavy handed with the knife or more precise? If heavy handed, I suggest a German style knife, whereas a Japanese style blade might be better if she is more delicate and precise with the cuts.

We use Victorinox knives, mixed with a few scalpels for animal processing. I keep them separate from the kitchen knives typically, so I know they are in good shape and sharp when needed.

I'm gonna go out on a limb here and says shes probably more heavy-handed.
While I was at the GTG yesterday evening my wife got a nice little Moore county buck. Her fire power of choice: 2012 Ram 2500. When she pulled over and got to the deer it was still alive so she used her carry knife to slit its throat/ carotid as she didn’t have a gun with her. She loaded it up got it home and gutted/ hung it by herself. She checked all the internals and nothing was ruptured. The one hind quarter looks a little dark but we will just turn it to hamburger. She has made it very clear she is going to do all the processing on her own too. I’m very proud of her. It makes me so mad that so many deer go to waste on the side of the road. There’s almost alway at least some parts that can be used instead of left to rot. View attachment 385650View attachment 385651

I know my wife is. She will pick up one of our japanese knives and start hammering away. It makes me cringe everytime.

This. Mine treats "her tools" with no discretion. (the exact words by her since I have my building and the kitchen is now the scale. Hers being woefully small and over equipped with tools.)
I cringe every time I see cutting instruments used as prybars, screwdrivers, or scrapers...much less trying to carve a hole in a cookie sheet as a cutting board. The worst is how they get tossed in a lump while stored or washed. The fancy block of cutlery gets reassembled for storage but in between the edges might as well be files for spoons forks and the like. The tray in the dish washer is the worst.
