Preping to brine and hardwood smoke a Turkey on Sat. I'm shure the bird would be proud to be treated so well compared to a dryed out, oven burnt run of the mill bird. Brine is Applejuice, water, fresh Rosemary,Gaalic,Juniper berrys,Seasalt, brn sug, Peppercorns, Bay leaf, and thinly sliced peel of 3 fat, ripe Navel Oranges. The bird will be gently handled and smoked on White Oak and Apple wood and anointed w apple juice as it smokes........OH BOY !!
