I smoked a prime rib last year for Christmas with a rosemary rub on it. Pulled it when the internal temp was 120F - 125F and slapped it on a smokin’ hot grill to sear quickly on all sides. It came out perfect.

Give me a couple hours and I’ll post a pretty typical but damn good pic of a rib roast, mashed taters, and green beans. Oh, and popovers. Popovers are the best!
