How to Cook a Steak

I know that I will be buying a couple steaks for dinner tonight.

That's exactly how I do mine up and exactly how I prefer my steaks done. I have to grill on Weber Charcoal grill though. I also feel the same about restaraunt steaks, you pay 4 times as much as what you would have paid at the store, and wind up with a steak that doesn't taste as good.
You can do a fine steak on a weber. Just keep a pile of coals on one side for the searing and none on the other side for the finishing. IMO, you should always grill with a hot side and a cool side. If you ever make it to the CLT area, hit me up. We'll grill some steaks and put down a few cold ones.
BTW any of you that put ketchup on a steak, or A! or H57...just give your steak to me you are doing it wrong.
When in a restraunt, if I have to ask for ANY condiment for my steak, they should be ashamed of themselves. That means their steak is a steaming pile of jerky and tastes like a retread.

the only restaurant i ever go to that knows how to do a steak is the beefmaster in wilson.

for my steaks i like them with the breath knocked out of them. garlic salt, laurys seasoning salt, montreal steak seasoning, worchestershire sauce and a little black pepper. get the grill good and hot (charcoal preferably) throw it up there for about 5mins per side.

Just finished a nice rib eye. room temperature, maybe an hour or so on the counter - this is key. Sea salt, pepper, live oil ( a litle bit).
Fill the chimney starter with good charcoal - either lump or misquite competition bricks, never match lite. Once fully ashed put steak on grill and set chimney over for 60-90 seconds, remove chimney and flip, 60 seconds on side two.
dump coals out, spread for hot side cool side, 2 minutes on hot side, 2 minutes on cool side.
Let it rest 5 minutes covered in foil.
eat.

I saw this on good eats a few years ago, it has never let me down.
