So our client asked if we could figure out how to cut a cross section of a spindle they make. Damn thing is about the size of a quick change differential. Made of cast iron and has bearings inside some forged and machines steel parts.

Here's a picture with my hand for size reference.

Any thoughts on how too? I'm guessing it need to be machined in parts and reassembled?

Would be my approach. Then again we made a cut away version of a full size mid shift fire pump for the city of Charlotte with cut off rocks and sawsalls when I worked for AREVS.
They use it as a teaching aid to show the impeller in pump gear and the two different flow patterns within the pump for volume and pressure. Damn thing even has a full size cut away pump panel.

Electronic Discharge Machining....it's really cool stuff!

Lol @shawn

I'd cut the casing with a bandsaw, and the rest on a milling machine.

Yeah, I'd rough cut it with a band saw and then clean it up on a mill.. But yes, it's going to need to be disassembled and then reassembled after the components are all sectioned. You may not want to section all of the parts, or not want to section all the parts along the same axis, etc.

Will you be painting the cross sectioned faces?

There's a company that specializes in this process, they do most of the cutaways for the automotive OEMs for shows, etc. Sounds like a fun specialist market to be in.
