Insulation question

I'd rather keep the moisture trapped beneath the slab than in the slab itself. Plastic under the slab is preventing a problem, seal coating to hold out moisture from below is trying to cover up a problem
I agree with all of this, but it also only applies if you are starting from scratch and don't have the slab in place already.
Fortunately for @YotaOnRocks he can do it.
 
Since you've got two pretty large garage doors in the building, its never going to be airtight. If it was me I would tape the "r10" roll insulation seams and spray open cell foam. It's inside a monster shop building who cares about possible off gassing.

Then find a used 5ton package heat pump or propane gas pack to keep it dehumidified and moderately warm inside.
I put a freebie 4 ton split heat pump on my conventionally insulated 40x60 shop and it does a pretty good job and its worth every penny. If you want to actually keep it 70 in summer and winter you'll obviously need more than a 5 ton.
