Need some advice on a structure

I have a source for some low grade lumber. Lots of it. Most of it is 2X3's.
Instead of going 16" on center, should I go 12" on center?
How tall would be "too tall""
What am I looking at building?
Thoughts as of now is a big wood shed, and/or a shed to park mowers (push and riders) , outside lawn type tools, and so on.
Roofs would be made with 2X4's and what ever roofing, metal or shingles. with many triangles to hold up to a wet snow like we got last year in December

I'm not sure what kind of spacing to use but every double-wide and mobile home I've ever been in has 2 by 2 or 2 by 3 trusses in the ceiling. Maybe look at how they're built

You could always double them up and make 2x6's out of them.
