Old Shop Insulation Guidance Needed

Curious to see how your cell / radio signal is afterward....
It's already a metal building.

The foil needs to be in open air to work, you don't want it touching the underside of the roof or anything where conduction becomes an issue. Otherwise, polyiso is what's under every tpo membrane roof out there. It's usually more like 4-6" of continuous on top of the deck, but it should be a big improvement over what you have.

It's 2x6 rafters so there will be space between the foil and the perlins. And yes I have to walk to the door for the cell phone to work anyway. Thanks this is my route.

The problem with spray foam is that when the roof eventually gets a leak it will trap the water inside that foam against the roof and the purlins. It will pool and find a way out via gravity and it will not be where the leak is so you will have to rip it out to figure out where the leak is.

I also vote for foam board; get expanded polystyrene with the foil layer and point it at the metal roof. The air gap will make it work as an effective radiant heat barrier.
I was about to say the same thing, I know a guy who had his roof rot out due to this same thing, didn't know he had a leak until one day he just happened to notice that the ceiling seemed to be bowed down.
