I went to Houston a couple weeks ago and sampled some Texas brisket. This has given me the itch to pull out the smoker and try something new.

I've smoked a few briskets and flat irons but want to try something new and different tomorrow while I work around the house and hopefully get in the shop to turn a wrench or two.

Anyone have a good cut of meat and/or recipe that they are willing to share?
 
I love a beat to hell flat iron marinated in Adolfs and slow cooked on the grill, and I never share that big steak!
 
Sirloin bottom round cut is great. season like a brisket and smoke to internal temp is 140. Slice and enjoy.

Tri-tip is great too if you can get it. Most places dont have it around here, I had to go to the Meat House to find it.
 
How bout a prime rib or standing rib roast? I've rotiseried a few, very deeeelicious, but never smoked one. Lots of recipies if ya google Smoking prime rib.
 
I went back and forth across town looking for a tri tip and all I could find was a flank steak... but it still turned out good.
