Does anyone have a good recommendation on seat covers that are durable, stay in place, but are easy to remove when you don't need them. I've looked at these but wondered if y'all had any better or cheaper ideas.

I have precision fit covers in my Tacoma. Good fit. Water resistant and have held up great to two big muddy dogs and still look brand new.

I had a set of Wet Okole neoprene seat covers in my CJ when I was stationed in Hawaii. Sand, salt water, pets, kids, they stood up to it all and were amazing even held up well to UV with no top and doors most of the time. By the time I made it back to the states I took them off when I sold the Jeep and the factory seats still looked as fresh as the day I put the covers on.
