So by now, you might be aware that I like to smoke things. I've acquired a gas pig cooker and am wanting to convert it to more of a smoker. Here's what I have and some thoughts...
Pig cooker as I got it...
Gas mixer/feed tube and cutouts for steam pans. Pans will be removed and holes covered with 1/8" plate
Expanded metal grate should hold a decent sized hog and a few extras...
Clearly the last owner didn't take care of it or clean it. That is just a diverter plate over the burner tube.
This is a 30x42 propane tank i just acquired to build a firebox
So the basic plan now it to cut the ends off of the propane tank and cut an access door with hinges. We'll weld plate onto each end. On the feed end, we'll make an air damper...likely by drilling a bunch of holes and having a damper that slides over the holes to govern air flow. On the outtake side, we'll marry the box to the cooker and install a 4" x 1/8" tube the goes from the firebox the entire length of the cooker, less a few inches. With the chimney over where it enters the cooker, we should get the reverse flow of the smoke. The tube will also act as a deflector for the burner when cooking after smoking. Eventually, we'll add a few burners (read hush puppy, chili and brunswick stew cookers) and add both propane and hardwood storage. A chopping table would be ideal, but likely portable at this stage. We'll likely have to widen it and add a larger axle for round 2 of upgrades. Welcome thought and input from all.
