TOTW - Camping Discussions - Eats

I have not done it over an open fire in a long time. When I used to do it that way dinner was usually hot dogs or something made from hamburger meat, beans from a can. Breakfast usually consists of eggs, bacon, grits, and suasage (always have one odd ball who does not like bacon). Lunch was usually a sandwich of some sort.
 
Breakfast burritos are a standard when we go camping, done on the Coleman stove:

tortilla wraps
corn beef hash
shredded sharp cheddar cheese
salsa
eggs

Fry up the hash til it's crispy, cook the eggs to order, layer - hand, tortilla, hash, cheese, egg, salsa - roll and eat.

Lunch we usually do trail food, anything from sandwiches to wraps to veggies and cheese.

Dinner, I'll usually prepare some spaghetti or chili ahead of time, heat and serve.

We've also done the foil dinners with beef, vegis, taters, then top with onion soup mix and some cream of mushroom soup, heat and serve.

When we're at the beach we try to find a local market and get a few lbs of shrimp. Add old bay to the water and boil, shake old bay liberally over the shrimp when done. Mix up some cocktail sauce (ketchup, lime and fresh horse raddish), peal and eat.

I don't buy the fact that you have to eat like crap when you camp. :D

That sounds good. Ima have to write that one down.
 
Best meal for the camp, if you have electric - bring a crockpot. If not, you can do all this in regular pot, just cooking noodles is harder.

We "can" deer each year, all it takes is small bite size pieces, and a tablespoon of salt (might be less) and then pressure cook/can them. They can sit on pantry shelf then without going bad.

Then, a can of Cream of Mushroom soup, and egg noodles. Cook the noodes as normal (slow cook if you go that route), add the cream of mushroom soup and then can of deer meat.

The deer meat has a really good taste with this method and is really good / filling at the end of the day.

I suppose this could be done with regular beef stew meat as well if you wish. Never tried it that way. The secret to this is the "canning", it just does something to the taste.

A Dutch oven, as mentioned earlier, is a great tool.

One of my favorite breakfasts is biscuts with sausage gravy.

Elevate a layer of aluminum foil (often using rocks) in the bottom of a Dutch oven. Place whop-um biscuts on the foil. Place Dutch oven on very little coals. "Flakey" biscuits suck for this meal! Place lots of coals on top. CHECK OFTEN or you may burn them.
Takes 20 minutes depending on heat.

In cast iron skillet or another Dutch oven cook quality hot sausage. When done drain drain most grease. Add two cans evap milk and some black pepper. Slowly stir in a tbl spoon or two flour to thicken. By the time this step is done biscuts are usually done.

Every time I cook this someone in the group swears its the best they've ever had.
 
My wife could take this one better but she make stew or chilli or getty and freezes it. they it on the fire and meal ready to it.
