I know there are a bunch of different tubing benders on the market. Why can't a standard exhaust bending machine work if the correct size dies are used? I have a nice exhaust machine I can use at work, why not? I am looking at using the EWS 2" .188 wall tubing.

Because most of them can't bend steel that thick.

An exhaust machine should work fine for .188 wall. I've bent plenty of 2" .250 wall with one. It was work but it did it. The biggest issue I've seen with those machines is that they're realatively fast which makes it hard to be accurate, plus the degree pointers usually lack a little to be desired.
The reason most people dont use them for roll cages is because they work on the same principle as a pipe bender that just pushes a die into the center of the bend basically making a big dent as the tube wraps around it. With a die that fits the tube tight and a wall thickness of .188 I think you'll be fine.
