NC BBQ - East vs West

What style of NC barbecue to you prefer?

I brought 7 lbs of barbecue back to MD w/ me from Prissy Pollies in K-ville.
Got both Lexington ("western nc") and Eastern style, just to show the chumps up here what different kinds of real BBQ are like. They don't seem to appreciate the difference, which boggles my mind.

Now I know this is a serious issue for some folks, right up there with going to thr right church or Foreign vs Domestic cars...

So what's yer preference when it comes to barbecue?
 
Red Slaw for me.
BBQ is what you eat - Southern Term
BBQ is what you do - Yankee Term
 
East.

And I love the red slaw. Stuff is cocaine man.
 
I've lived all over this beautiful state and NoOne makes better BBQ than east. There's even a restaurant here in brevard that serves both and the east dominates.

So true, when I moved down here from PA I was so confused.

I went to a restaurant and ordered barbecue thinking I was going to get some chicken and I got this pile of strange looking shit. :lol:
 
I'm not a huge fan of the red slaw, either... but I also don't like carrots in it, just cabbage and mayo (preferably Duke's or JFG). ;)

I voted eastern but I am an equal-opportunity BBQ fan, really. Haven't tried it all, but haven't found one I didn't like yet, either. :beer:
 
Guess I'm a communist I prefer the real deal TEXAS BBQ. My family is from there & its what I grew up on I do enjoy ribs but if its BBQ its BEEF for me. Slow cooked over mesquite. Great now I got to make a trip back to Fort worth.
 
I go to Texas a lot for school each year - it's a bunch like western style if you ask me. Throw a bunch of sauce on it 'cause you cooked it to fast - hee hee! Mac's Speed Shop in Charlotte is Texas Briskets with your eyes closed. "iluv mud" I usually stay around Grapevine area, I'm guessing you go to Bone Daddys? Ft. Worth area's got some unbeatable steaks, won't argue that.

When I used to help cook for big lunches/Thanksgivings/fundraisers/Christmas, to do it right took a long time - up all night with the burn barrels and monitoring temperature. Also liked to eat the meat that was stuck to the grate, like a hard jerky snack while you wait.

Red Slaw, White Slaw - I'll eat either but prefer red. And agreed - NO CARROTS IN THE SLAW

BBQ is Pork - this is "North Carolina 4X4"
 
I am partial to memphis style BBQ. The pig on beal st has the best ribs I have ever tasted. I am from California originally and was also confused the first time I had BBQ in NC. I asked what the meat choices were and the waitress just said all they had was BBQ. I learned fast that meant pulled pork. I like the pulled pork, but really miss smoked brisquet.

Texas BBQ FTW. I was born and raised in Texas and you just can't beat the BBQ. I've had other places claim to be Texas style and it came close but it just wasn't right. Now I'm not knockin BBQ here in NC I will eat the crap out it as well. As for the slaw I don't usually eat either one of them but if I had to chose it would be white w/o the carrots. Who the heck puts carrots in slaw.
 
I like to get a plate of half and half @Prissy's because I end up with like 5/8 + 5/8...125% FTW!

I got their take out deal, 1 lb of BBQ + 1/2 pint of slaw, 7 of them.
They PACKED it into styrofoam containers, supposedly 2 lbs each, I wish I'd weighed it before separating out for the guys b/c it was super dense and felt like alot more than that.
I think they felt sorry for me when I told them why I needed so much.

BTW I do admit I like Texas style too, honestly I like most styles, for different moods etc but IMO BBQ = pork and NC is the best. Up here they call it "pit beef" and could be beef or pork :confused:, use an awful thick tomato paste base.
 
I've been to Bone Daddys & its good but its a chain the best BBQ joints are generally hole in the wall places that generally the locals only know about. Sonny Bras is better than Bone daddys if your talking chain BBQ joints. BTW you aren't kidding about the steaks in Fort Worth but what do expect from the beef capital of the world.The best BBQ I ever had was at the Salt lick watched a special on it on Food network and the smell alone was worth the trip. BTW a brisket that isn't cooked at least 8 hours is crap. I love Texas and plan on moving some.day. The only pork I generally like is Bacon & ribs. I had no idea this was NC4x4 I thought I joined the BBQ forums LOL:flipoff2:
 
Lexington is West? Could I please have a brief explanation of each before I decide?

Brisket cooks at least 10 hrs. Use Kingsford if you buy charcoal. Propane is for chumps. Pork is heroin with bacon being the good stuff. Vinegar=good. Carrots can be used with discretion and who cares what color the slaw is, which one is closer?

Who's up for a friendly grill off near a rock garden?
 
I like any bbq, but not as big a fan of vinegar sauces. I prefer to smoke my own and let the rub do the flavoring, I don't like messin it up with sauce most of the time.

Dave you should get a smoker and make your own and freeze it, it keeps well. Then you can get your fix whenever you need it.
