I bet it's great cooked offer coals. Going try that at some point
If you have a grate over your pit, it does good in just the skillet. When putting directly on/next to the coals, I like to use something with a lid. Overthefirecooking.com has some awesome recipes, if you havent checked it out.

I’m addicted to my smoker. It’s getting bad...
Even Mac n cheese is better this way

I swear, I found out I was gonna be a dad and for a solid year I’ve been addicted to grilling/smoking anything

Decided to give the old smoker a workout this past week. What a week it was.

First I made a brisket for Easter Sunday

The lastly I made a beer can chicken which we turned into a chicken fried rice. (no pics but I highly recommend)
 
Got some small beef ribs on the smoker. Going to have squash casserole and deep fried mushrooms with them later. I hit them with some homemade sauce with evan William's bourbon in it at the beginning. Pic updates around 7pm. Squash for the casserole was garden fresh from last year and canned

I’ve got 4 ribeyes I’m going to be soaking in a marinade shortly for tomorrow and I may fire up the smoker too. I haven’t decided yet.

doves from the freezer, brined in water,sea salt, brown suger and soy sauce, cuts on the breast blades stuffed w peppers and onion and wrapped w bacon on the Pit Boss tonight.....O boy!
