If you have a grate over your pit, it does good in just the skillet. When putting directly on/next to the coals, I like to use something with a lid. Overthefirecooking.com has some awesome recipes, if you havent checked it out.I bet it's great cooked offer coals. Going try that at some point

According to my math, if I leave now, they will be done resting and ready to eat right when I get there!1.5" ribeyes. 2 min,flip,2 min turn,2 min turn, 2 min flip. Rest off the heat.

12.5 hrs laterPut these 2 butts on at 4am. Shooting for around 12 hrs on the smoker.
