What are you having for dinner?

Cast iron skillet some squash, zucchini and onions similar to what I cooked for @Noel and the rest of the misfits at the Veterans Ride, but with heavily dusted pork chops in Butt Rub.

Dinner is served!

All on the BGE partly so I could be alone and partly because the wife didn’t want dishes for me to clean…. nice of her.

Man I bet that was really good until it started to cool off and get dry and tough like turkey does...

It wasn't dry at all... but I had everything else ready, and the turkey went on the plate as soon as it was done. And I made sure it didn't overshoot temp.

I cooked a couple of extra pieces for tomorrow -- I know I will have do something to it, especially with reheating it. I have some duck stock and duck fat, I plan make a gravy from that.

reheat it on medium to low, in a pan of stock. It will help keep in some moisture as it warms up. Only need to get it warm enough for your liking.

@Noel @Caver Dave

Not dinner… but more of a snack over the next couple days.

About to make the mignonette sauce so the flavors can marry. :huggy:

I bought some meat from a local farm store and this was a fresh butchered Rib Steak or bone in ribeye. It was not good at all. I've eaten gamey deer meat and it wasn't like that, it was hard to eat and try to enjoy. Glad I only bought one to try out. I also bought a piece of tenderloin so when I try it I'll def have a backup plan.

It is hard to tell completely after its cooked, but that ribeye looks super lean. Also possible that it didnt hand long enough. Ive had some beef that only hung for a week, and it had an off taste to it.

Doth appear to UNhung?

This is before cooking and even tho I know nothing about butchering meat, my exact thought was that it wasnt hung long enough or bled out correctly.

Nothing more disappointing than being excited for no reason.

It looks pretty lean for a ribeye. That could contribute to it being tough. Not hanging long enough can give an off taste, and make the meat more tough also. We bought a cow during the pandemic craziness. The processor was behind and didnt let it hang long enough. The meat had a gamey taste to it. Ground wasnt too bad when used in something, but I wouldnt use it for burgers, as they just tasted off. Most other people didnt notice it though.
