Neither! Chewy is overdone and dried out, and crispy is cooked too hot. I like it where the fat is still soft, but the meat is about like a medium well steak.
Chewy is the best cause if somebody does'nt like theirs that way you can always cook it some more and ruin it for them I like to sprinkle a little sugar on it sometimes just before it's done ( Gomer Pyle style ), or shake some worchestershire on it and stir the bacon around which makes it more tasty and keeps it chewy and tender.
