Some of you may remember the story of my wife making ‘steak’ the first few years we were living together…and it was always terrible. Finally, one day, I noticed a ‘stew beef’ wrapper on the top of the trash after I just choked down a ‘steak’ and eggs dinner. Fast forward a decade…the wife decided she wanted smash burgers tonight while at the butcher. I notice the brown paper on top the trash can after dinner…ground wagyu. I guess better than the alternative, but I asked her what she thought she bought…‘I dunno, I just saw ground beef and bought a few pounds’. Oh…do you know what wagyu is??? Of course. Well that’s what you bought…and you smashed it. “Oh, I thought it was a little more expensive today”.

Obviously I’m not going hungry…but I am mourning smashed wagyu, a wagyu patty that ended up on the floor when a 3.5 year old decided she just wanted the lettuce and tomatoes on her bun, and a burger that ended up soaked in chic fil a honey bbq, because that’s my 5 year olds favorite condiment.
 
I haven't grilled any wings in a while, so I figured it was about time. Gonna dip them in some Carolina treat cut back with some beer when they get about done. Then mix some dukes mayonnaise and sirhacha for some dipping sauce. Good stuff

I really like that cheap scoop/spatula I found on amazon, works great w the long spatula to turn, toss and stir the stuff.

bought a 2$ baby bottle and snipped the tip to make a oil squirter, will get another for water soon.

Had the smoker out this weekend. Pork tenderloin, venison, ribs, sausage, corn and beans.

First time making smash burgers 2night on the Blackstone w the cheap HT 80/20. I used Jane's Krazy mixed garlic seasoning on the butter on the griddle and on the tops of the burgers while the first side cooked. Put a burger on bun and took a bite...blown away. Had sliced maters,onions,lettuce etc. I put a piece of Velveeta on it and loved it. I'm sure I can make a better burger w better beef and more times on the griddle, this was the 3rd time using it

Am I the only one who doesn't like high quality beef burger? My wife likes to get rid of money and sometimes buys those expensive steak burgers and I honestly don't care for them. They are too tender. They don't have the mouth feel of a real burger to me.

I mean i like all of it, but gimme some cheap 80/20 or 85/15 ground beef on cheap whitebread buns and I'm a happy man!
