I bought mine at sams club for like $50. Wasnt sure if I'd use it enough to justify another hundred dollar kitchen gadget. Now im thinking I could use at least 2 more to do multiple things at different temps/time.

Just the tenderloins from that big doe after aging them.Marinaded in Soy Vay Island teriyaki overnight and grilled quick on the webber......

Not tonight but the prep tonight......
Marinaded deer shoulder.
Take a shoulder and remove as much silverskin and fat you can off it.

Then score it deep on both sides but not enough to make it fall apart....

Season w salt and cracked pepper, I use janes crazy mixed up salt. Then put the shoulder in a 2.5 gal. Ziplock and pour a whole bottle of PNewmans balsamic dressing. Marinade 2 days turning 3 or 4 times. Take it out bout . Hr. Bfor grilling, then grill and turn bout every 10 mins.As it browns slice/fillet the outside down to the red and put in a bowl or just serve it off the grill in a hot sourdough roll......and some good beer! I also baste w more dressing sometimes.

Found some good ribeyes friday afternoon @ harris teeter after shuffling through a dozen of them that looked like chit.....

They were very good on the webber last night w some damp, shagbark hickory bark smoke on the coals .
 
First attempt at a brisket.

one bacon wrapped cut.

Bark turned out great on the one I didn’t wrap in bacon.
