What are you having for dinner?

Wing nite.

Wife found a Dill Pickle Parmesan Chicken recipe. Sounds awful is what I said. But I reluctantly made it and all through the process I was not interested.

Then the first bite… WOW! That was damn good! Made some hand cut shoestring fries to go with it.

Definitely making this again! Only thing I did differently was to marinade for a few hours instead of 30 min. And I egged, floured, egged and then panko/parmed it.

Did the taco fiasco yesterday on the disco. No finished photos because we were stuffing our faces.

Fresh chorizo, market bacon, flank steak, yellow and red pepper, 5 jalepeno, 3 poblanos. Each meat was roughly 1#.

I buy meats and now non poisonous lettuce at Earth Fare in town. Cheaper and organic as compared to our only option in town… Ingles.

I got some trick bleu cheese and a nice balsamic vinegrette.

Tonight is salad night with some flank steak.

Nose surgery coming up in a few weeks, and I'll be stuck with soft cold food for a few days. So, why not peach smoothies?

Bought a half-bushel the other day, and processed the today. Peeled and cut, washed with lemon juice, and frozen on parchment paper on a cookie sheet, then bagged in zip-locs. Ended up with 21 bags, with just about a cup and a half in each one.

That'll go good with the 36 pints of blueberries I froze back in June, plus about as many strawberries.

(I was out of vacuum sealer bags, so when they come in, I plan to vacuum bag about 3 zip-locs together in one bag. Whatever is left will be good thru the winter.)
