What are you having for dinner?

Some of my new alpha gal diet. Chicken, fish, chicken, fish. Repeat. Repeat again. No mammalian meat or products at all. Tomorrow is 14th day.

Cheeseless, meatless pizza. Was surprisingly good. Onion, tomatos, jalapeno, spinach, mushrooms, lots of garlic.

Forgot a pic, but did this recipe for dinner tonight...it was fantastic.

Spicy Baked Sea Trout with Lemon Butter Sauce

Edit: This was the first time I used this recipe. I did double the onion, and left off the salt. Next time, I'd cut the butter in about half (I used smart balance fake butter). Also, I sprinkled on some dried parsley to make it pretty, and put some sliced spring onion on top.

Cooked this again tonight....will post the modified recipe later. Added some tomato (chopped up in the processor) and it added some good color.

Did it on the grill this time

Here is the sea trout recipe.

Ingredients
  • 2 pounds of sea trout fillets or other firm fleshed fish
  • 4 Tablespoons minced onion (I chopped this and the tomato in a food processor)
  • 4 Tablespoons chopped tomato
  • 1/4 cup stick unsalted butter melted
  • 2 Tablespoons fresh lemon juice
  • 1 teaspoon paprika
  • 2 tsp red pepper flakes
  • dash black pepper
  • 1 Tablespoon capers rinsed
Instructions
  • Heat grill to 350 F.
  • Place fish on foil (first spray foil with cooking spray)
  • Whisk the melted butter, lemon juice, minced onion, tomato, paprika, red pepper flakes, black pepper, capers until well blended. Spoon the sauce evenly over the fillets.
  • Place fish, on foil, on the grill.
  • Grill 20 to 25 minutes until fish flakes with a fork. The fillets will be firm but still moist.
  • Serve immediately.
