No pics (forgot), but I'll tell you about it.

Local fish market had some fresh alamco jack the other day. Kind of a cousin to amberjack, but not as strong-flavored. Some consider it a trash fish. Very similar to grouper I thought. But grouper was 22.95/lb, this was 8.95/lb

Anyway, I made up a marinade:
  • 1 Tbsp sugar
  • 1/2 cup red wine vinegar
  • 1/2 cup lemon juice
  • 1 tsp fresh thyme
  • 1/2 cup Worcestershire sauce
  • 2 Tsp minced garlic
  • Pinch of salt
Mixed everything in a 1 gallon ziplock, added fish (6 filets), let sit for 30 minutes, turning occasionally. Grilled on medium-hot grill 7 or so minutes per side.

Came out terrific!!

Pizza! Real, cheese covered pizza!

Found some veggie cheese that actually tastes good, melts properly, and looks right.

Daiya brand. Used Cheddar and mozzarella.

Meat is butterball turkey sausage crumbles. Great in an omlette, too breakfasty-tasting for a pizza.

(For those in the dark, I have alpha gal syndrome courtesy of a tick bite, and am now allergic to all mammalian meat and meat products)

Grilled some chicken with Ms Dash italian blend. Then sauteed some onions, fresh mushrooms, garlic, and oregano. Added about a half a jar of store-bought sketti sauce. Mozzarella on top (Daiya fake cheese for me, real cheese for Renee). Veggies are frozen/microwaved in a bag. Simple, fast, and pretty darn good.
