Made another pizza tonight. Trying to use everything fresh up before another store trip on Tuesday.

Leg of lamb for Easter Sunday. Had been holding it for a family gathering today, but with social distancing, it's just the two of us.

This was the last of the meat from when I bought my scissor lift. Best craigslist deal ever. As i started to drive off, the guy asked me if I wanted some meat. Gave me three coolers full of steaks, ground beef, and a leg of lamb. All of it had been on the hoof at his place the week prior.

Pizza just went in the oven for lunch. We have found them to be quick, easy, and darn good.

I made meatballs this time and sliced them up. Didnt take long. Half pound of 93% ground beef, 1/2 cup bread crumbs, 1 egg, tsp black pepper, tsp Italian seasoning, half cup of mozzarella. Made into golf balls, and cooked in pan about 15 minutes.

Did you use a pre-made crust? I was actually thinking of trying to make pizza dough until I saw how long it took to kneed and raise the dough...
 
Yep....they are three to a pack, more like a tortilla. Not as good as a real crust, but fast. And fit my wife's dietary restrictions.

Another thing I have learned is when you already have a mess, go ahead and pre-prepare part of another meal. Since the fry pan was in use, went ahead and browned up some burger meat for later.
