Rubbed and smoked chickin wings/drumetts, take out from the Original NY Pizza in Holly Springs, celery and chunky blue cheese and the left over sushi from last night.

^^^^^ did those a little different....put shrimp in a bowl, lots of generic Cajun spice mix, about a half cup of EVOO, and let sit about 30 minutes. Cooked on our old Holland grill, about 3.5 minutes per side. Perfect.
 
Put one of our chickens in the crockpot, coats in bearded butcher butter. Had with wild rice and green beans. Then cooked the bones overnight to make a few quarts of broth for the freezer.

I spent the day cooking some bulk stuff for the week (and to freeze), so tossed a bunch in the crock pot for chili of the 'kitchen sink' variety :lol: for dinner with baked cornbread.

1# ground beef, 3 kinds of beans, diced tomatoes, bell peppers, mushrooms, potatoes, sweet potatoes, 1/2 can of jalapeños, and all the spices.

Served with a little shredded cheese and sour cream, it was a hit as usual. :D

We made chili too. Yesterday I smoked a couple of tri tips, which would go into the chili.

I ended up using the larger of the two tri tips and cubed it. Diced up some bacon & fried it in a stock pot. Removed the bacon & cooked white onion, red bell pepper, green bell pepper, serrano peppers, jalapeño peppers & garlic in the bacon grease. When the veggies were done, I added fire roasted diced tomatoes, black beans, pinto beans, tomato paste, spices, flour, a Shiner Bock & 3 bay leaves. Let it simmer for 3 hours. My better half made homemade corn bread. Delicious!

I made the sauce yesterday: 1# hamburger, 1# mild Italian sausage, salt, pepper, garlic, basil, oregano, big can of crushed tomatoes. I used maybe 1/3 of it (MD round container) tonight, mixed with some of the mushrooms and peppers I sauteed separately yesterday.

Mixed two eggs with half a cartoon of ricotta, tempered with cooked macaroni, then mixed in the skillet with the pasta and then in the oven for 10 minutes. Mixed in a bit of sauce and then spread the rest on top, topped with mozzarella. Under the broiler for about 3 minutes until the cheese is right.

It is good! Next time I'll use a little more meat sauce but it had good flavor and the ricotta made it rich. Sometimes I also put pepperoni on top with the mozzarella. :lol:

We ate half tonight (that's my trusty 13" skillet), so the rest might get fixed up a little for leftovers on Wednesday.

Tonight was my 6-year-old's favorite, taco Tuesday! Ground beef that I browned on Sunday, salsa, cheese, sour cream, and pintos. We also had some of the potatoes that I sauteed on Sunday (the half that didn't end up in the chili).
 
I decided to cook a meal my daughter put me onto.

My wife made that and it was ok. Certainly fine, but nothing to get excited about. I think @Andy J. actually had dinner with us that night. Maybe he had a more positive impression.
